While we can’t currently enjoy the pleasures associated with a cross country trek to the mountains, that doesn’t mean we can’t relive one of the best road trips in the history of mankind. Of course we’re talking about Lloyd Christmas and Harry Dunn’s journey from Providence, Rhode Island to Aspen, Colorado in the 1994 feature film, Dumb and Dumber.

And what better way to celebrate this comedy powerhouse than to honor one of its best on the road characters, the worn down, diner waitress known simply as “FLO.” Since translating Soup du Jour for Lloyd as the “Soup of the Day,” we’ve pined to find out just what Flo’s trademark soup actually tastes like. After countless hours scouring social media for the elusive waitress, we finally got in touch with her and asked the question we’ve all wanted answered: what exactly was the soup of the day, that day… FLO?
We’re proud to reveal that we’ve got the recipe and digging into a bowl of Flo’s Soup du Jour is guaranteed to put a smile on your face. Just remember to toss salt over your shoulder if you spill the shaker.
Flo’s Soup de Jour | AKA ‘Kansas Style Minestrone’
Ingredients:
- 3 cloves garlic, chopped finely
- 2 sweet onions, diced
- 2 cups chopped celery
- 5 carrots, sliced
- 2 cups chicken broth
- 2 cups water
- 4 cups tomato sauce
- 1/2 cup red wine (optional)
- 1 cup canned kidney beans, drained
- 1 (15 ounce) can green beans
- 1 tablespoon chopped fresh oregano
- 2 tablespoons chopped fresh basil
- salt and pepper to taste
- 1/2 cup elbow macaroni pasta
- 2 tablespoons grated Parmesan cheese for topping
- Olive Oil
Cooking Directions:
Place a large pot over medium low heat and heat olive oil and cook chopped garlic for 2 to 3 minutes until fragrant. Add onion and cook until translucent. Add celery and carrots, cook 3 minutes
Add chicken broth, water and tomato sauce, bring to boil and continue to stir frequently. Optional step here to add red wine as it provides a lighter texture to the traditional Minestrone. Lower heat and bring to a simmer. Add kidney beans, green beans, spinach leaves, oregano, basil, salt and pepper. Let simmer for 1 hour.
Fill a medium pot with water and bring to a boil. Add macaroni and cook until tender. Drain water and set aside.
Once pasta is cooked and soup is finished through place 2 tablespoons cooked pasta into serving bowls and then ladle soup on top of pasta and sprinkle Parmesan cheese on top.
